Ingredients

  • 4 cups green cabbage
  • 2 medium carrots
  • 2 cups purple cabbage
  • 0.5 cup fresh parsley
  • 4 stalks green onion
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Trim and core the green and purple cabbage. Thinly slice both cabbages into fine shreds and place them in a large mixing bowl.

Step 2

Peel the carrots and use a grater (or food processor with a grating attachment) to shred them. Add the shredded carrots to the bowl with the cabbage.

Step 3

Finely chop the fresh parsley and slice the green onions thinly. Add both to the mixing bowl for added color and flavor.

Step 4

In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and black pepper until the dressing is well combined and emulsified.

Step 5

Pour the dressing over the shredded vegetables and toss everything together until the slaw is evenly coated with the dressing.

Step 6

Let the slaw sit for about 10–15 minutes to allow the flavors to meld together. For a more vibrant color and tangy flavor, refrigerate for longer if desired.

Step 7

Before serving, give the slaw a good toss and adjust the seasonings if needed. Serve as a fresh, festive side dish for your Easter table!
