Ingredients

  • 2.5 cups all-purpose flour
  • 2 cups granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cup unsalted butter, softened
  • 4 eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup whole milk
  • 4 cups confectioners' sugar
  • 8 ounces cream cheese, softened
  • 3 tablespoons heavy cream
  • 4 drops (per color) pastel food coloring
  • 0.5 cup Easter-themed sprinkles

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans; line the bottoms with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add softened butter to the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.

Step 4

In a separate medium bowl, beat the eggs, then whisk in milk and vanilla extract.

Step 5

Slowly pour the wet ingredients into the dry mix while beating on medium speed. Continue mixing until just combined and smooth, being careful not to overmix.

Step 6

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake the cakes for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool for 10 minutes in the pans, then turn them out onto a wire rack to cool completely.

Step 8

To make the frosting, beat the cream cheese and butter until smooth. Gradually add in the confectioners' sugar, a cup at a time, and mix until fluffy. Beat in the heavy cream to reach your desired consistency.

Step 9

Divide the frosting into separate bowls and mix in a few drops of pastel food coloring to create different colors.

Step 10

Once the cakes are completely cool, place one layer on a serving plate. Spread an even layer of frosting on top, then stack the second cake layer.

Step 11

Frost the outside of the cake with a thin crumb coat, then frost again with the pastel-colored frosting as desired.

Step 12

Decorate the top and sides of the cake with Easter-themed sprinkles.

Step 13

Chill the cake for 15-20 minutes to set the frosting, then serve and enjoy!
