Ingredients

  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 0.25 teaspoons salt
  • 1.25 cups milk
  • 1 whole egg
  • 3 tablespoons unsalted butter (melted)
  • 2 whole bananas
  • 6 whole strawberries
  • 0.5 cup blueberries
  • 0.25 cup shredded coconut (optional, for 'nest')
  • 1 tablespoon powdered sugar (optional, for garnish)
  • 12 pieces chocolate chips (optional, for bunny face)

Directions

Step 1

In a large bowl, sift together the flour, baking powder, sugar, and salt.

Step 2

In a separate bowl, whisk together the milk, egg, and melted butter.

Step 3

Gradually pour the wet ingredients into the dry ingredients, whisking until the batter is smooth and lump-free.

Step 4

Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.

Step 5

To create bunny shapes, pour the batter onto the skillet in three portions: one large circle for the head and two smaller oval shapes for the ears. Use a separate spoonful of batter to attach the ears to the head.

Step 6

Cook the pancakes for 2-3 minutes on one side, until bubbles form on the surface. Then, flip and cook for an additional 1-2 minutes, until golden brown. Set aside on a plate and keep warm.

Step 7

Slice bananas into discs for the bunny's cheeks and cut a strawberry into a small triangle for the nose and thin slices for the inside of the ears.

Step 8

Arrange the bunny face: Place the strawberry triangle in the center of the pancake for the nose, two banana slices below for the cheeks, and chocolate chips or blueberries for the eyes and whiskers. Add thin strawberry slices to the ear sections if desired.

Step 9

For the 'egg basket,' halve the remaining strawberries and use them as the base of the basket. Place blueberries and reserved banana slices on top to look like eggs. Optional: Sprinkle shredded coconut beneath the 'eggs' for a 'nest' effect.

Step 10

Sprinkle the bunny pancakes with powdered sugar for a festive touch, if desired.

Step 11

Serve the bunny pancakes alongside the fruit 'egg baskets' and enjoy your Easter morning treat!
