Ingredients

  • 120 grams Unsalted butter
  • 80 grams Caster sugar
  • 1 piece Large egg yolk
  • 200 grams Plain flour
  • 1 tsp Baking powder
  • 1 tsp Mixed spice
  • 0.5 tsp Ground cinnamon
  • 75 grams Currants
  • 1 tbsp Milk
  • 2 tbsp Caster sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F and line two baking trays with baking parchment.

Step 2

In a mixing bowl, beat the unsalted butter and caster sugar together until light and fluffy using an electric mixer or wooden spoon.

Step 3

Add the egg yolk to the butter and sugar mixture and beat until well combined.

Step 4

In a separate bowl, sift together the plain flour, baking powder, mixed spice, and ground cinnamon.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring until a rough dough forms.

Step 6

Fold in the currants evenly through the dough.

Step 7

Add the milk, one tablespoon at a time, to bring the dough together into a firm but pliable consistency.

Step 8

Roll out the dough on a lightly floured surface to about 5mm thickness.

Step 9

Using a 6cm round fluted cookie cutter, cut out the biscuits and place them onto the prepared baking trays, leaving some space between them.

Step 10

Gather and re-roll the scraps to cut out more biscuits until all the dough is used.

Step 11

Bake the biscuits in the preheated oven for 10-12 minutes, or until they are just starting to turn golden at the edges.

Remove the biscuits from the oven and sprinkle them immediately with caster sugar while they are still hot.

Allow the biscuits to cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.
