Ingredients

  • 8 oz soba noodles
  • 2 tbsp sesame oil

  • 1 medium zucchini, julienned
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce (optional for added umami)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp toasted sesame seeds
  • 2 stalks green onions, thinly sliced

Directions

Step 1

Bring a large pot of water to a boil and cook the soba noodles according to the package instructions. Drain and rinse with cold water to remove excess starch. Set aside.

In a large skillet or wok, heat 1 tablespoon of sesame oil and 1 tablespoon of olive oil over medium-high heat.

Add the sliced onion to the skillet and sauté for 2-3 minutes until softened.
