Ingredients

  • 500 grams Beef (stew meat or chuck, cut into bite-sized cubes)
  • 1.5 cups Basmati rice
  • 2 medium Onions (finely chopped)
  • 2 medium Tomatoes (finely chopped)
  • 3 cloves Garlic cloves (minced)
  • 1 tablespoon Ginger (grated)
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 2 teaspoons Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Red chili powder (adjust to taste)
  • 1 Cinnamon stick
  • 4 Cloves
  • 1 Bay leaf
  • 3 Green cardamom pods
  • 2 cups Beef stock or water
  • 0.5 cup Yogurt
  • 2 tablespoons Cilantro (fresh, chopped, for garnish)
  • 1 to taste Salt
  • 2.5 cups Water (to cook rice)
  • 1 Cinnamon stick (for rice)
  • 2 Green cardamom pods (for rice)

Directions

Step 1

Rinse the basmati rice under cold running water until the water runs clear, then soak it in water for 20 minutes. Drain before cooking.

Step 2

Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for 1 minute until fragrant.

Add the chopped onions and cook until golden brown, about 8-10 minutes. Stir frequently to avoid burning.

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.

Add the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and a pinch of salt. Cook for 5-7 minutes until the tomatoes soften and the oil begins to separate.

Pour in the beef stock or water, bring to a boil, and then reduce the heat to low. Cover and simmer for 60-75 minutes, stirring occasionally, until the beef is tender and the sauce has thickened. Adjust salt to taste.

While the beef is cooking, prepare the rice. In a separate pot, bring 2.5 cups of water to a boil. Add 1 cinnamon stick, 2 green cardamom pods, a pinch of salt, and the soaked, drained rice.

Lower the heat, cover, and cook the rice for 15 minutes or until all the water is absorbed and the rice is tender. Remove from heat and let it rest for 5 minutes before fluffing with a fork.

Once the beef is done, stir in the garam masala and garnish with fresh cilantro.
