Ingredients

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 medium russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup milk
  • 0.5 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes or until the potatoes are tender.

Step 3

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain off any excess fat.

Step 5

Stir the tomato paste into the cooked beef, then add the beef broth, Worcestershire sauce, mixed vegetables, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat.

Step 6

Once the potatoes are tender, drain them and return them to the pot. Mash the potatoes with butter and milk until smooth and creamy. Season with salt to taste.

Step 7

Transfer the beef and vegetable mixture to a 9x9-inch baking dish, spreading it out evenly. Spoon the mashed potatoes on top and smooth them out with a spatula.

Step 8

Sprinkle the shredded cheddar cheese over the mashed potatoes.

Step 9

Bake in the preheated oven for 20 minutes or until the cheese is melted and the filling is bubbly around the edges.

Step 10

Allow the shepherd's pie to rest for 5 minutes before serving. Enjoy!
