Ingredients

  • 3 pounds Chuck roast

  • 4 medium Carrots, peeled and cut into large chunks
  • 4 medium Russet potatoes, peeled and cut into chunks
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Thyme, fresh or dried
  • 1 teaspoon Rosemary, fresh or dried

Directions

Step 1

Season the chuck roast generously with salt and pepper on both sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the roast for about 3 minutes on each side until browned. This step is optional but adds extra flavor.
