  • 500 grams Chicken breast, diced
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 large Onion, diced
  • 3 Garlic cloves, minced
  • 1 medium Zucchini, diced
  • 1 small Eggplant, diced
  • 1 large Bell pepper, diced
  • 400 grams Canned diced tomatoes
  • 2 cups Chicken stock
  • 1 teaspoon Dried Italian seasoning
  • 2 tablespoons Fresh basil, chopped
  • 0.25 cups Optional: Parmesan cheese, grated

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Season the diced chicken breast with salt and black pepper. Add to the pot and cook for 5-7 minutes, stirring occasionally, until lightly browned. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the diced zucchini, eggplant, and bell pepper to the pot. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften.

Step 5

Stir in the canned diced tomatoes, chicken stock, and dried Italian seasoning. Bring the mixture to a gentle simmer.

Step 6

Return the browned chicken to the pot. Cover and simmer on low heat for 25 minutes, stirring occasionally to prevent sticking.

Step 7

Taste the soup and adjust seasoning with additional salt and pepper if needed.

Step 8

Serve hot, garnished with fresh chopped basil. Optionally, sprinkle with grated Parmesan cheese for an extra savory touch.
