Ingredients

  • 12 oz Linguini pasta
  • 4 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and sliced
  • 1 cup Artichoke hearts, chopped
  • 3 cups Spinach, fresh
  • 1 cup Crumbled feta cheese
  • 1 Lemon, zested and juiced
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguini and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Add the cherry tomatoes to the skillet and cook for 5 minutes, stirring occasionally, until they begin to soften and release their juices.
