Prepare your protein by cutting it into bite-sized pieces. If using tofu, press it well to remove excess moisture.
In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, cornstarch, water, sugar, sesame oil, and salt. Set this sauce mixture aside.
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add your chosen protein and cook until fully cooked through. This will take about 4-5 minutes for chicken or beef, 2-3 minutes for shrimp, or 5-6 minutes for tofu. Remove the protein from the skillet and set aside.
