  • 1 cup Sushi rice
  • 1.25 cups Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 4 large pieces Tempura shrimp
  • 2 full sheets Nori sheets
  • 0.5 medium Cucumber
  • 1 medium Avocado
  • 2 tablespoons Spicy mayo
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame seeds

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear. Combine with 1.25 cups of water in a rice cooker and cook according to manufacturer's instructions.

Step 2

Mix the rice vinegar, sugar, and salt in a small bowl. Once the rice is done, transfer to a large bowl and gently stir in the vinegar mixture until well combined. Allow to cool to room temperature.

Step 3

Prepare the cucumber by slicing it into thin strips. Peel and slice the avocado into similar-sized strips.

Step 4

Lay down a bamboo sushi mat on a clean working surface. Place one nori sheet, shiny side down, onto the mat.

With wet hands, spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top edge.
