Ingredients

  • 1 kg beef chuck roast
  • 2 tablespoons unsalted butter
  • 3 large yellow onions
  • 2 tablespoons all-purpose flour
  • 750 ml beef stock
  • 2 tablespoons red wine vinegar
  • 1 tablespoon brown sugar
  • 2 bay leaves
  • 4 cloves
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Cut the beef chuck roast into bite-sized cubes, approximately 2.5 cm in size.

Step 2

Peel and thinly slice the onions into half-moon shapes.

Step 3

In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium heat.

Step 4

Add the beef cubes to the pot in batches, searing them until browned on all sides. Remove and set aside on a plate.

Step 5

Add the sliced onions to the pot and cook until caramelized, about 10-12 minutes, stirring frequently to prevent burning.

Step 6

Sprinkle the flour over the onions and stir well until the flour is evenly distributed, cooking for an additional 2 minutes to remove the raw flour taste.

Step 7

Slowly pour in the beef stock while stirring to create a smooth sauce.

Step 8

Stir in the red wine vinegar and brown sugar until fully combined.

Step 9

Return the seared beef to the pot and add the bay leaves, cloves, nutmeg, cinnamon, salt, and black pepper.

Step 10

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid, leaving a small crack for steam to escape.

Step 11

Cook the beef on low heat for 2.5 to 3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.

Step 12

Remove the bay leaves and whole cloves before serving. Taste and adjust seasoning if needed.

Step 13

Serve the Dutch Spiced Beef hot with mashed potatoes, crusty bread, or steamed vegetables for a wholesome meal.
