  • 500 grams All-purpose flour
  • 75 grams Granulated sugar
  • 7 grams Active dry yeast
  • 250 milliliters Milk
  • 75 grams Unsalted butter
  • 1 large Egg
  • 1 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 100 grams Dried raisins
  • 100 grams Dried currants
  • 50 grams Candied orange peel
  • 200 grams Marzipan
  • 50 grams Powdered sugar
  • 2 tablespoons Milk (for glaze)

Directions

Step 1

In a small saucepan, heat the milk until lukewarm (about 110°F/43°C). Remove from heat and stir in the active dry yeast and 1 teaspoon of sugar. Let it sit for 5–10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour, remaining sugar, salt, and cinnamon. Mix well.

Add the yeast mixture, egg, and softened butter to the dry ingredients. Mix until a rough dough forms.

Turn the dough onto a floured surface and knead for about 8–10 minutes until smooth and elastic.

Incorporate the raisins, currants, and candied orange peel by kneading them into the dough. Ensure the fruits are evenly distributed throughout.

Place the dough ball in a greased bowl, cover with a clean towel, and let it rise in a warm place for approximately 1 hour, or until doubled in size.

Punch down the dough and roll it out onto a floured surface into a rectangle about 12x8 inches.
