  • 1 large yellow onion, chopped
  • 3 medium carrots, peeled and cut into chunks
  • 2 stalks celery stalks, chopped
  • 4 cloves garlic cloves, minced
  • 6 sprigs fresh thyme sprigs
  • 4 sprigs fresh rosemary sprigs
  • 1 cup dry white wine
  • 3 cups chicken or vegetable broth
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Pat the hen dry with paper towels and season it generously with 1 teaspoon of salt and 1/2 teaspoon of black pepper, ensuring both the inside and outside are seasoned.

Heat the olive oil in a large Dutch oven over medium-high heat. Once hot, sear the hen on all sides until golden brown, about 4-5 minutes per side. Remove the hen and set it aside.
