Ingredients

  • 40 grams butter
  • 40 grams all-purpose flour
  • 1 liters chicken or vegetable stock
  • 250 milliliters cooking cream (or heavy cream)
  • 4 tablespoons Zaanse mustard (or any coarse-grained mustard)
  • 100 grams streaky bacon (optional, for garnish)
  • 0.5 piece leek (optional, for garnish)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

1. In a medium pot, melt the butter over medium heat.

Step 2

2. Gradually whisk in the flour to form a smooth roux. Cook the roux for 1-2 minutes, stirring frequently, but do not let it brown.

Step 3

3. Slowly add the stock to the roux, whisking continuously to avoid lumps. Bring the mixture to a gentle simmer and let it thicken, about 5-7 minutes.

Step 4

4. Once thickened, reduce the heat to low. Stir in the cooking cream and allow the soup to heat through, without boiling.

Step 5

5. Add the Zaanse mustard to the soup, stirring until fully incorporated. Taste and season with salt and black pepper as needed.

Step 6

6. If using bacon, slice it into small strips and fry in a separate pan until crispy. Set aside for garnish.

Step 7

7. If using leek, thinly slice the white part and sauté it gently in a pan until softened (optional for garnish).

Step 8

8. Ladle the soup into bowls and garnish with crispy bacon and/or sautéed leek, if desired.

Step 9

9. Serve immediately with crusty bread on the side for dipping. Enjoy!
