Ingredients

  • 100 grams Butter
  • 100 grams All-purpose flour
  • 500 milliliters Beef or veal stock
  • 300 grams Cooked beef or veal (finely shredded)
  • 1 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 3 pieces Eggs
  • 200 grams Breadcrumbs
  • 1 liter Vegetable oil (for frying)

Directions

Step 1

In a medium saucepan, melt the butter over medium heat.

Step 2

Once the butter is melted, add the flour and whisk constantly to form a roux. Cook for 2-3 minutes until the roux is golden and no longer smells raw.

Step 3

Gradually add the beef or veal stock to the roux, whisking constantly to prevent lumps. Cook until the mixture thickens into a smooth sauce.

Step 4

Add the shredded cooked beef or veal, nutmeg, salt, pepper, and parsley to the sauce. Stir well to combine.

Step 5

Transfer the mixture to a shallow dish and allow it to cool completely in the refrigerator for at least 2 hours or until firm.

Once the mixture is chilled and firm, shape it into small cylindrical croquette shapes, approximately 8-10 centimeters long.

In a shallow bowl, beat the eggs. Place the breadcrumbs in a separate bowl.
