  • 4 large eggs
  • 2 tablespoons fresh parsley, chopped
  • 4 slices crusty bread (for serving)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and cook for 3-4 minutes until softened and translucent.
