Ingredients

  • 120 grams All-purpose flour
  • 80 grams Unsalted butter (cold, diced)
  • 100 grams Aged Gouda cheese (grated)
  • 1 large Egg yolk
  • 1 teaspoon Paprika powder
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 1 tablespoon Cold water
  • 20 grams Extra grated Gouda (optional, for topping)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the flour, paprika powder, ground black pepper, and salt.

Add the cold, diced butter to the dry ingredients. Using a pastry cutter, two knives, or your fingertips, mix until the mixture resembles coarse crumbs.

Mix the grated Gouda into the dough until evenly distributed.

Add the egg yolk and cold water to the mixture and mix gently to form a cohesive but not overly wet dough. If the dough seems too dry, add an extra teaspoon of water at a time.
