Ingredients

  • 100 grams pearl barley
  • 1 liters water
  • 500 milliliters milk
  • 200 milliliters heavy cream
  • 100 grams sugar
  • 1 piece vanilla bean
  • 1 piece cinnamon stick
  • 1 teaspoon lemon zest
  • 1 pinch salt
  • 50 grams raisins (optional)
  • 1 pinch ground nutmeg (for garnish)

Directions

Step 1

Rinse the pearl barley thoroughly under cold water to remove excess starch.

Step 2

In a large pot, combine the rinsed barley and water. Bring to a boil over medium heat.

Step 3

Once boiling, reduce the heat to low and simmer the barley for 25 minutes or until tender, stirring occasionally. Drain any excess water if needed.

Step 4

While the barley simmers, split the vanilla bean lengthwise and scrape out the seeds. Reserve both the seeds and the pod.

Step 5

In the same pot, add the cooked barley, milk, heavy cream, sugar, vanilla seeds and pod, cinnamon stick, lemon zest, and salt.

Stir the mixture gently and heat over medium-low heat until it just begins to simmer. Do not let it boil.

Lower the heat and cook for 20 more minutes, stirring occasionally to prevent sticking. The mixture should thicken slightly.

If using raisins, add them in the last 5 minutes of cooking to plump them up.

Remove the pot from heat and discard the vanilla pod and cinnamon stick.
