Ingredients

  • 500 g cannellini beans (or navy beans), cooked and drained
  • 150 g bacon, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp dark brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp molasses
  • 3 tbsp tomato paste
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.25 tsp black pepper
  • 250 ml water or vegetable stock
  • 0 to taste salt

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large oven-safe skillet or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the rendered fat in the pan.

Step 3

Add the chopped onion to the pan with the bacon grease and sauté over medium heat for 5-7 minutes until soft and translucent.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
