Preheat your oven to 180°C (355°F) and grease a 9-inch (23 cm) springform pan.
In a large mixing bowl, combine the flour, granulated sugar, and salt.
Cut the butter into small cubes and add it to the flour mixture. Use your hands or a pastry cutter to mix until the texture resembles coarse crumbs.
Add the egg and knead the dough until it comes together. Wrap the dough in plastic wrap and chill in the refrigerator for at least 20 minutes.
While the dough is chilling, peel, core, and slice the apples into thin wedges. Place the apple slices in a large bowl.
Add the cinnamon, brown sugar, raisins, and lemon juice to the apples. Toss to evenly coat and set aside.
Once the dough has chilled, divide it into two portions, one slightly larger than the other. Roll out the larger portion on a lightly floured surface and use it to line the bottom and sides of the springform pan.
Sprinkle the breadcrumbs evenly across the bottom crust. This helps to absorb excess liquid from the apple filling.
Pour the apple mixture into the crust, making sure it's evenly distributed.
Roll out the smaller portion of dough and cut it into strips to create a lattice pattern on top of the pie. Lay the strips over the apple filling, weaving them to create a crisscross design.
Trim any excess dough and press the edges gently to seal.
Place the pie in the preheated oven and bake for 50-60 minutes, or until the crust is golden brown and the apples are tender.
Remove the pie from the oven and allow it to cool for at least 15 minutes before removing the springform and serving.
Serve warm or at room temperature, optionally topped with whipped cream or vanilla ice cream.
