Ingredients

  • 230 grams unsalted butter
  • 100 grams granulated sugar
  • 2 teaspoons vanilla extract
  • 315 grams all-purpose flour
  • 0.5 teaspoons salt
  • 4 medium apples (such as Granny Smith, peeled and diced)
  • 75 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 75 grams rolled oats
  • 100 grams light brown sugar
  • 85 grams unsalted butter (chilled and cubed)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x13-inch (23x33 cm) baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a large mixing bowl, cream together the 230 grams of butter and 100 grams of granulated sugar until smooth. Stir in the vanilla extract.

Step 3

Add the 315 grams of all-purpose flour and 0.5 teaspoon of salt to the butter mixture and mix until crumbly but cohesive.

Step 4

Press the mixture evenly into the prepared pan to form the crust. Bake for 15 minutes, or until lightly golden. Set aside to cool.

Step 5

In a medium-sized bowl, toss the diced apples with 75 grams of brown sugar, 1 teaspoon of cinnamon, 0.25 teaspoons of nutmeg, 1 tablespoon of cornstarch, and 1 tablespoon of lemon juice.

Step 6

Spread the apple mixture evenly over the cooled crust.

Step 7

In another mixing bowl, combine 75 grams of rolled oats, 100 grams of light brown sugar, 85 grams of chilled cubed butter, and 75 grams of all-purpose flour. Use your fingers, a pastry cutter, or a fork to mix until crumbs form.

Step 8

Sprinkle the oat mixture evenly over the apples to create the streusel topping.

Step 9

Bake the bars for 30–35 minutes, or until the topping is golden brown and the apples are tender.

Step 10

Allow the bars to cool in the pan completely before lifting them out using the parchment overhang. Slice into squares or rectangles to serve.
