Ingredients

  • 300 grams all-purpose flour
  • 175 grams unsalted butter
  • 160 grams sugar
  • 1 pinch salt
  • 1 egg
  • 2 teaspoons cold water
  • 6 apples (Granny Smith or similar)
  • 75 grams raisins
  • 2 tablespoons lemon juice
  • 2 teaspoons cinnamon
  • 3 tablespoons breadcrumbs
  • 1 egg for egg wash

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch springform pan.

Step 2

In a large bowl, mix together 300g of all-purpose flour, 175g of sugar, and a pinch of salt.

Step 3

Cut 175g of cold unsalted butter into small cubes and mix it into the flour mixture using a pastry cutter or your fingers, until it resembles breadcrumbs.

Step 4

Add one beaten egg and 2 teaspoons of cold water. Mix until a dough forms. Knead the dough lightly until smooth, wrap in cling film, and refrigerate for at least 30 minutes.

Step 5

Peel, core, and thinly slice 6 apples. Place the apple slices in a bowl and toss them with 75g of raisins, 2 tablespoons of lemon juice, and 2 teaspoons of cinnamon.

Step 6

Remove the dough from the fridge. Roll out two-thirds of the dough on a floured surface to fit the bottom and sides of the springform pan, with a little overhang.

Step 7

Sprinkle 3 tablespoons of breadcrumbs evenly over the crust base. This will absorb some of the apple juices.

Step 8

Fill the crust with the apple mixture, carefully mounding it slightly in the center.

Step 9

Roll out the remaining dough and cut into strips. Create a lattice pattern over the top of the apples.

Step 10

Beat another egg for the egg wash and brush it over the lattice crust.

Step 11

Trim and crimp the edges of the pie.

Step 12

Bake in the preheated oven for 60 minutes or until the crust is golden brown and the apples are tender.

Allow the appeltaart to cool slightly in the pan before removing and serving.
