Ingredients

  • 1 egg yolk
  • 50 grams sliced almonds
  • 1 egg white (lightly beaten)
  • 0.25 teaspoon salt

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Step 2

Add the cold, cubed unsalted butter to the dry mixture. Using a pastry cutter or your fingertips, work the butter into the flour until it resembles coarse crumbs.

Step 3

Mix in the almond extract, vanilla extract, and egg yolk until the dough comes together. If the dough feels too dry, add a teaspoon of cold water at a time until it holds.

Divide the dough in half, shape each portion into a disc, and wrap them in plastic wrap. Chill in the refrigerator for 30 minutes.
