Ingredients

  • 4 pieces lamb chops
  • 4 tablespoons Dundee marmalade
  • 2 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons olive oil
  • 0.5 teaspoons sea salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red chili flakes (optional)

Directions

Step 1

Begin by patting the lamb chops dry with a paper towel. Season both sides with the sea salt and black pepper.

Step 2

In a small mixing bowl, combine the Dundee marmalade, soy sauce, balsamic vinegar, minced garlic, chopped rosemary, olive oil, and optional red chili flakes. Stir well to create a smooth glaze.

Step 3

Place the lamb chops in a shallow dish or zip-top bag and pour half of the marmalade glaze over them. Massage the glaze into the chops to ensure even coating. Reserve the other half of the glaze for later.

Step 4

Cover the dish or seal the bag and let the lamb chops marinate for at least 15 minutes at room temperature. For deeper flavor, you can refrigerate for up to 2 hours (just bring to room temperature before cooking).

Step 5

Preheat a grill pan or skillet over medium-high heat. Add a drizzle of olive oil to lightly coat the surface.

Step 6

Once the pan is hot, sear the lamb chops for 3-4 minutes on each side until they develop a golden-brown crust. Lower the heat to medium and continue cooking to your desired doneness (145°F/63°C for medium-rare, 160°F/71°C for medium).

Step 7

During the last 2 minutes of cooking, brush the reserved marmalade glaze over the chops, flipping them once to caramelize the glaze and enhance the flavor.

Step 8

Remove the lamb chops from the pan and let them rest for 5 minutes to retain their juices.

Step 9

Serve the Dundee Marmalade Lamb Chops hot with your favorite sides, such as roasted vegetables, mashed potatoes, or a crisp green salad.
