Directions

Step 1

Wash the tomatoes thoroughly. Cut a small X on the bottom of each tomato using a sharp knife.

Bring a large pot of water to a boil. Add the tomatoes to the boiling water for 30 seconds, then transfer them immediately to a bowl of ice water.

Peel the skins off the tomatoes (they should come off easily). Remove the cores and roughly chop the tomatoes into small pieces.
