Ingredients

  • 100 grams Hazelnuts
  • 50 grams Sesame seeds
  • 2 tablespoons Coriander seeds
  • 2 tablespoons Cumin seeds
  • 1 tablespoon Fennel seeds
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Sea salt
  • 1 teaspoon Sweet paprika (optional)

Directions

Step 1

Preheat a dry skillet over medium heat.

Step 2

Add the hazelnuts to the skillet and toast them for 3-4 minutes, stirring frequently, until their skins darken and they become fragrant. Remove from the skillet and let them cool slightly, then rub off the skins using a clean kitchen towel.

Step 3

In the same skillet, toast the sesame seeds for about 1-2 minutes, stirring constantly, until golden and fragrant. Transfer to a bowl and set aside.

Step 4

Next, add the coriander seeds, cumin seeds, fennel seeds, and black peppercorns to the skillet. Toast them for 2-3 minutes, stirring frequently, until aromatic. Be careful not to burn the spices.

Step 5

Let all toasted ingredients cool completely before proceeding.

Step 6

In a food processor or using a mortar and pestle, combine the toasted hazelnuts, sesame seeds, spices, sea salt, and paprika if using.

Step 7

Pulse or grind the mixture until it reaches a coarse, sandy texture. Be careful not to over-process, as you want to avoid turning it into a paste.

Step 8

Taste the spice blend and adjust the salt if necessary.

Step 9

Store the Dukka in an airtight container at room temperature for up to 2 weeks. Serve as a dip for bread with olive oil or use it to season grilled vegetables, meats, or salads.
