Ingredients

  • 1 cup hazelnuts
  • 0.5 cup sesame seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon fennel seeds (optional)
  • 1 teaspoon black peppercorns
  • 1 teaspoon paprika
  • 1 teaspoon salt

Directions

Step 1

Preheat a dry skillet over medium heat. Add the hazelnuts and toast for 4-5 minutes, stirring frequently, until the skins start to darken and crack. Remove from the skillet and allow them to cool slightly.

Step 2

Using a clean kitchen towel, rub the cooled hazelnuts to remove as much of the skins as possible. It’s okay if some skin remains. Roughly chop the hazelnuts and set them aside.

Step 3

In the same dry skillet, toast the sesame seeds for 2-3 minutes, stirring often, until golden and fragrant. Transfer to a bowl and set aside.

Step 4

Add the coriander seeds, cumin seeds, fennel seeds, and black peppercorns to the skillet. Toast for 2-3 minutes, stirring frequently, until aromatic. Remove from heat and let the spices cool slightly.

Step 5

Using a spice grinder, food processor, or mortar and pestle, grind the toasted spices into a coarse powder. Be careful not to over-process them into a fine powder; the mix should have texture.

Step 6

In a mixing bowl, combine the ground spices with the hazelnuts, toasted sesame seeds, paprika, and salt. Mix thoroughly to combine.
