Ingredients

  • 1 cup Port wine
  • 2 tablespoons Unsalted butter
  • 2 small Shallots
  • 2 cloves Garlic cloves
  • 2 sprigs Fresh thyme
  • 1 cup Chicken or duck stock
  • 0.25 cup Heavy cream
  • 1 teaspoon Balsamic vinegar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Finely mince the shallots and garlic cloves. Set them aside.

Step 2

In a medium saucepan, heat 1 tablespoon of the butter over medium heat until melted.

Step 3

Add the minced shallots and garlic. Sauté for 2-3 minutes, stirring frequently, until softened and fragrant.

Step 4

Pour in the port wine and add the thyme sprigs. Increase the heat to medium-high and simmer for 8-10 minutes, or until the wine reduces by half.

Step 5

Stir in the chicken or duck stock and continue to simmer for another 6-8 minutes, allowing the sauce to reduce and thicken slightly.

Remove the thyme sprigs and reduce the heat to low. Stir in the heavy cream, balsamic vinegar, salt, and black pepper. Simmer for an additional 2 minutes.
