Prepare the banana leaves by rinsing them under cold water and patting them dry. Gently pass them over an open flame to soften, making them pliable for wrapping.
In a large mixing bowl, combine the cornmeal, grated coconut, brown sugar, raisins, cinnamon, nutmeg, vanilla extract, and salt. Mix well to evenly distribute the dry ingredients.
Gradually add the water to the mixture while stirring to create a thick, well-combined batter. The mixture should hold together but not be too dry.
Cut the banana leaves into rectangular sections, approximately 10x12 inches in size. Place about 1/3 cup of the cornmeal mixture in the center of each leaf.
Fold the banana leaf tightly around the mixture, creating a secure parcel. Fold in the sides first, then roll up the length, and tie it neatly with kitchen twine or strips of banana leaf to keep it secure.
Repeat the process with the remaining batter and banana leaves until all the parcels are wrapped and tied.
Bring a large pot of water to a boil and place a steamer basket or rack inside. Arrange the parcels in the steamer basket, ensuring they are not overcrowded.
Cover the pot and steam the Duckanoo parcels for approximately 1 hour and 15 minutes. Check periodically to ensure there is enough water in the pot, adding more if necessary.
Once steamed, remove the parcels from the pot and allow them to cool slightly. They can be served warm or at room temperature. To enjoy, simply unwrap the banana leaf and dig in!
