Ingredients

  • 1 large (approximately 500g) duck breast
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground white pepper
  • 0.5 cup hoisin sauce
  • 4 stalks spring onions
  • 1 medium cucumber
  • 12 Chinese pancakes

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the duck breast dry with paper towels. Score the skin in a criss-cross pattern, being careful not to cut into the meat.

Step 3

Rub the skin with sea salt and ground white pepper.

Step 4

Place the duck breast, skin-side down, in a cold, oven-safe skillet. Turn the heat to medium and cook for about 8-10 minutes to render the fat and crisp the skin.

Once the skin is golden and crispy, turn the duck breast over and transfer the skillet to the preheated oven.

Roast the duck breast for 15-20 minutes or until it reaches an internal temperature of 135°F (57°C) for medium-rare.

Remove the duck breast from the oven and let it rest for 10 minutes before slicing into thin pieces.

While the duck is resting, prepare the spring onions and cucumber. Slice the spring onions finely into long strips. Cut the cucumber into long matchsticks.
