  • 2 pieces Duck breast
  • 4 tablespoons Butter
  • 2 tablespoons Olive oil

  • 3 cloves, minced Garlic
  • 2 teaspoons, chopped Fresh thyme
  • 0.5 cups Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 8 sheets Phyllo dough sheets
  • 0.5 cups, melted Unsalted butter
  • 16 pieces, blanched (for tying purses) Chives

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the duck breasts with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper.

Step 3

Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the duck breasts, skin-side down first, for about 3-4 minutes per side until golden brown. Remove and let cool.

Once cooled, finely chop or shred the duck meat and set aside.

Step 5

In the same skillet, melt 3 tablespoons of butter over medium heat. Add the chopped shallots and sauté until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.

Stir in the chopped thyme and heavy cream. Cook for 2-3 minutes until slightly thickened. Add the chopped duck meat, remaining 0.5 teaspoons salt, and remaining 0.25 teaspoons black pepper. Mix well. Remove from heat and let the filling cool.

Lay one phyllo dough sheet on a clean, dry surface. Brush it lightly with melted butter. Add another sheet on top and brush with butter again. Repeat until you have four buttered layers.

Cut the stacked phyllo sheet into 4-inch squares.

Place about 2 tablespoons of the duck filling in the center of each phyllo square. Gather the edges of the dough to form a small purse and pinch lightly to seal.

Step 10

Tie each purse securely with a blanched chive to keep it closed.

Place the purses on a parchment-lined baking sheet. Brush the tops lightly with melted butter.

Step 12

Bake the purses in the preheated oven for 15-18 minutes or until golden and crispy.
