  • 2 pounds russet potatoes
  • 4 tablespoons unsalted butter

  • 0.25 cup parmesan cheese, grated
  • 1 large egg yolk (for brushing)
  • 1 tablespoon water

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Peel and chop the potatoes into even chunks. Place them in a large pot, cover with cold water, and add a pinch of salt.

Bring to a boil over medium-high heat, then reduce heat to low and simmer until tender, about 15-20 minutes.
