Ingredients

  • 6 links pork sausages
  • 6 slices thick-cut bacon
  • 2 medium yellow onions
  • 4 large potatoes
  • 2 whole garlic cloves
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cups chicken stock
  • 1 cup Irish stout beer (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet over medium heat, brown the sausages on all sides until golden. Remove and set aside.

Step 3

In the same skillet, fry the bacon slices until slightly crispy. Remove, drain excess fat, and set aside.

Step 4

While the bacon cooks, peel the onions and cut them into thick slices. Peel the potatoes and slice them into 1/4-inch rounds. Mince the garlic.

Layer half of the potato slices in the bottom of a large oven-safe casserole dish or Dutch oven.

Step 6

Add a layer of half the onions, followed by half the sausages and bacon. Sprinkle with half the minced garlic, salt, and pepper.

Repeat the layering process with the remaining potatoes, onions, sausages, bacon, garlic, salt, and pepper.

Pour the chicken stock evenly across the layers. If using Irish stout beer, pour it in as well for an additional depth of flavor.

Cover the dish tightly with a lid or aluminum foil and place in the preheated oven.

Bake for 1 hour, then remove the cover and bake for an additional 30 minutes, or until the potatoes are tender and most of the liquid has been absorbed.
