Ingredients

  • 4 medium-sized Potatoes
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon, minced Ginger
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon (or to taste) Salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Peel and dice the potatoes into small cubes, about 1/2 inch in size. Set them aside in a bowl of water to prevent browning.

Step 2

Heat oil in a large skillet or pan over medium heat.

Step 3

Once the oil is hot, add mustard seeds and allow them to crackle. Then add cumin seeds and stir for about 10 seconds until fragrant.

Step 4

Add the finely chopped onion and sauté for 4-5 minutes until golden brown.

Step 5

Stir in the minced garlic and ginger, and cook for another minute until aromatic.

Step 6

Add the turmeric powder, coriander powder, and red chili powder. Mix well and cook for 30 seconds to bloom the spices.

Step 7

Drain the diced potatoes and add them to the pan. Stir to coat the potatoes evenly with the spices.

Step 8

Add salt and 1/4 cup of water, then cover the pan with a lid. Reduce the heat to low and cook for around 12-15 minutes, stirring occasionally, until the potatoes are cooked through and tender.

Step 9

Once the potatoes are fully cooked and no liquid remains, turn off the heat. Stir in the lemon juice and chopped cilantro.

Step 10

Serve hot as a side dish with rice or flatbread, or enjoy on its own.
