Cut the pork spareribs into bite-sized pieces, about 2 inches long. Pat them dry with paper towels and set aside.
Peel and finely mince the garlic cloves. Divide the minced garlic into two portions: one for the marinade and one for cooking.
In a large bowl, combine the soy sauce, brown sugar, half of the minced garlic, salt, and black pepper. Mix well to form the marinade.
