Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 2 lemongrass stalks
  • 3 garlic cloves (minced)
  • 1 tablespoon ginger (grated)
  • 1 red chili (sliced)
  • 2 tablespoons olive oil
  • 0.25 cup dry white wine
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 teaspoon brown sugar
  • 2 tablespoons cilantro leaves (chopped, for garnish)
  • to taste salt
  • to taste black pepper
  • as needed steamed jasmine rice (for serving)

Directions

Step 1

Prepare the lemongrass by trimming the tough outer layers and the root end. Finely mince the tender inner stalks and set aside.

Step 2

In a large skillet or wok, heat olive oil over medium heat.

Step 3

Add the minced garlic, grated ginger, and sliced red chili. Sauté for 1-2 minutes until fragrant.

Step 4

Stir in the minced lemongrass and cook for another minute.

Step 5

Add the shrimp to the skillet. Season with salt and black pepper. Cook for 2 minutes on each side or until the shrimp begin to turn pink and opaque.

Step 6

Pour in the white wine and fish sauce, stirring to deglaze the pan. Allow the liquid to reduce slightly, about 1-2 minutes.

Step 7

Lower the heat and stir in the lime juice and brown sugar. Toss the shrimp to coat them evenly in the sauce.

Step 8

Remove the skillet from heat and garnish with chopped cilantro leaves.
