  • 1 cup Shaoxing rice wine

  • 1 inch piece Ginger
  • 3 stalks Scallions
  • 3 whole Garlic cloves
  • 2 whole Star anise
  • 2 cups Chicken stock
  • 3 cups Water

Directions

Step 1

Rinse the chicken thighs under cold water and pat them dry with paper towels.

Peel the ginger and slice it into thin coins. Also, bruise the scallions by gently crushing them with the side of a knife.

In a large pot, combine the water, chicken stock, sliced ginger, bruised scallions, garlic cloves, and star anise. Bring to a boil over medium-high heat.
