Ingredients

  • 1 piece (about 4-5 lbs) Whole chicken
  • 3 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Onion powder
  • 2 teaspoons Brown sugar
  • 3 whole, crushed Fresh garlic cloves
  • 1 can 12-ounce can of beer (lager or pale ale preferred)
  • 1 half (optional for added flavor) Lemon

Directions

Step 1

Preheat your grill or oven to 375°F (190°C).

Step 2

Remove any giblets from the inside of the chicken and pat the chicken dry with paper towels.

Step 3

Rub the outside of the chicken with olive oil, ensuring it's evenly coated for crisping.

Step 4

In a small bowl, mix together the salt, black pepper, garlic powder, smoked paprika, dried thyme, onion powder, and brown sugar.

Evenly rub this spice mixture all over the chicken, including under the skin if possible, for maximum flavor.
