  • 6 Whole chicken thighs (bone-in, skin-on)
  • 2 inch piece Ginger
  • 4 Scallions
  • 1 cup Shaoxing wine
  • 4 cups Chicken broth
  • 2 tablespoons Soy sauce
  • 1 teaspoon Salt
  • 1 teaspoon Rock sugar or white sugar
  • 8 cups Water (for blanching)

Directions

Step 1

Fill a large pot with 8 cups of water and bring to a boil. Add the chicken thighs and blanch for 2–3 minutes to remove impurities. Remove the chicken and rinse under cold water. Discard the blanching water.

Step 2

Peel the ginger and slice it thinly. Cut the scallions into 2-inch pieces.

Step 3

In the same pot, combine the chicken thighs, ginger slices, scallion pieces, chicken broth, and salt. Bring to a boil over medium-high heat, then lower the heat and simmer for 20–25 minutes until the chicken is fully cooked.

Remove the chicken thighs from the pot and let them cool. Strain the cooking liquid into a clean bowl and discard the ginger and scallions.

Mix the strained cooking liquid with Shaoxing wine, soy sauce, and sugar. Stir well until the sugar dissolves.
