Rinse and dry the cherries thoroughly. Leave the stems intact if desired or remove them for easier use later. Remove the pits if you prefer pitless cherries.

In a small saucepan, combine water, granulated sugar, and the cinnamon stick. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved and the mixture comes to a gentle simmer (about 3-4 minutes).
