Rinse the pinto beans under cold water and remove any debris or damaged beans.
Place the beans in a large bowl and cover them with water. Soak the beans overnight, or for at least 8 hours. Drain and rinse them before cooking.
Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped bacon and cook until crisp, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside, leaving the rendered fat in the pot.
Add the diced onion to the pot and cook for 3-4 minutes, stirring occasionally, until softened and translucent.
Stir in the minced garlic and diced jalapeño. Cook for 1-2 minutes until fragrant.
Add the soaked and drained pinto beans to the pot, along with the diced tomatoes (with their juices), beer, chicken broth, ground cumin, smoked paprika, and salt. Stir well to combine.
Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the beans are tender, stirring occasionally. If the beans begin to dry out, add a little more chicken broth or water.
Once the beans are cooked, stir in the cooked bacon and chopped fresh cilantro.
