Ingredients

  • 12 oz Elbow macaroni
  • 4 tbsp Unsalted butter
  • 4 tbsp All-purpose flour
  • 2 cups Whole milk
  • 1 cup Beer (lager or pale ale)
  • 2 cups Sharp cheddar cheese, shredded
  • 1 cup Gruyere cheese, shredded
  • 4 oz Cream cheese
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Panko breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to create a roux, stirring constantly to avoid lumps.

Gradually whisk in the milk and beer, adding a little at a time and whisking constantly until the mixture is smooth. Bring to a gentle simmer and cook for 3-4 minutes until slightly thickened.
