  • 2 tablespoons Olive oil

  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 1 can Beer (12 oz can)
  • 1 piece Fresh rosemary sprig
  • 2 cloves Minced garlic
  • 0.5 piece Lemon

Directions

Step 1

Preheat your grill or oven to 375°F (190°C) if using an oven or set your grill to medium-high heat for indirect cooking.

Step 2

Remove any giblets and excess fat from the cavity of the chicken. Pat the chicken dry with paper towels.

Step 3

In a small bowl, mix olive oil, salt, black pepper, paprika, garlic powder, onion powder, and dried thyme to create the spice rub.

Rub the olive oil and spice mixture generously all over the chicken, including the cavity and under the skin if possible.

Open the beer can and pour out about one-third of the beer. Add the minced garlic, fresh rosemary, and a squeeze of lemon juice to the beer inside the can.

Place the open beer can on a flat, stable surface. Carefully lower the chicken onto the can so that the beer can is inserted into the cavity. Adjust the chicken to sit upright on the can with its legs forming a tripod for stability.

Place the chicken (in the upright position) on the grill or in a roasting pan if using the oven. Cook using indirect heat for about 90 minutes, or until the internal temperature of the thickest part of the chicken (breast or thigh) reaches 165°F (74°C).

Carefully remove the chicken and beer can from the grill or oven. Let the chicken rest for 10-15 minutes before gently removing the beer can.
