Directions

Step 1

Preheat your oven to 375°F (190°C).

Cut the zucchini in half lengthwise and scoop out the flesh using a spoon, leaving about 1/4-inch of the shell intact. Reserve the scooped-out flesh and finely chop it.

Brush the zucchini shells with 1 tablespoon of olive oil and place them cut side up on a baking sheet lined with parchment paper. Bake in the preheated oven for 10 minutes, then remove and set aside.
