Ingredients

  • 6 pieces Bone-in, skin-on chicken thighs
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.5 cup White wine (optional, or substitute with more broth)
  • 1 cup Dried plums (prunes), halved
  • 0.5 cup Green olives, pitted and sliced
  • 4 sprigs Fresh thyme sprigs
  • 1 piece Bay leaf
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.

Step 2

Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Add the chicken thighs skin-side down and sear for 4-5 minutes until the skin is golden brown and crispy. Flip and sear the other side for another 3 minutes. Remove the chicken from the skillet and set aside.

Lower the heat to medium and add the chopped onion to the skillet. Sauté for 3-4 minutes until softened, then stir in the minced garlic and cook for 1 more minute.
