Ingredients

  • 500 grams Chicken breast
  • 10 pieces Dried red chilies
  • 4 cloves Garlic
  • 1 tablespoon Ginger
  • 2 tablespoons Cornstarch
  • 3 tablespoons Soy sauce
  • 1 tablespoon Dark soy sauce
  • 1 tablespoon Rice vinegar
  • 2 teaspoons Sugar
  • 3 tablespoons Vegetable oil
  • 2 stalks Green onions
  • 1 teaspoon Sesame oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Cut the chicken breast into bite-sized pieces and place them in a bowl. Add 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, salt, and black pepper. Mix well to coat the chicken and set aside to marinate for 10 minutes.

Step 2

Slice the garlic and ginger thinly. Cut the green onions into 1-inch pieces. Break the dried red chilies into halves and remove the seeds if you prefer less heat.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat. Add the marinated chicken and stir-fry until golden and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the same pan. Add the dried red chilies, garlic, and ginger, and stir-fry until fragrant, about 1-2 minutes.

Step 5

Return the chicken to the pan and mix well. Add 2 tablespoons of soy sauce, dark soy sauce, rice vinegar, sugar, and 1 tablespoon of cornstarch mixed with 2 tablespoons of water to form a slurry. Stir well to coat the chicken.

Add the green onions and sesame oil, tossing everything together quickly until combined and heated through.

Serve immediately with steamed rice or noodles for a complete meal.
