Ingredients

  • 2 pieces Ribeye or strip steaks
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Garlic cloves, minced
  • 1 cup Cremini or button mushrooms, sliced
  • 1 teaspoon Fresh thyme
  • 1 cup Heavy cream
  • 1 tablespoon Fresh parsley, chopped

Directions

Step 1

Take the steaks out of the refrigerator 30 minutes before cooking to let them come to room temperature.

Step 2

Season both sides of the steaks evenly with salt and black pepper.

Step 3

Heat a large skillet or cast-iron pan over medium-high heat and add the olive oil.

Step 4

Once the oil is shimmering, add the steaks to the pan. Sear on each side for about 3-4 minutes for medium-rare or longer for your preferred doneness.

Step 5

Remove the steaks from the pan and set them aside to rest, tented with aluminum foil.

Step 6

Reduce the heat to medium and add the butter to the same pan.

Step 7

Once the butter has melted, add the minced garlic and cook for 30 seconds until fragrant.

Step 8

Add the sliced mushrooms to the pan and sauté for 5-7 minutes until they are golden and softened.

Step 9

Sprinkle the fresh thyme over the mushrooms and stir to combine.

Step 10

Pour in the heavy cream, stirring constantly, and simmer for 2-3 minutes until the sauce thickens.

Step 11

Return the steaks (and any resting juices) to the pan, spooning the sauce over them to warm them through for 1-2 minutes.

Step 12

Plate the steaks and top them generously with the mushroom and herb sauce.

Step 13

Garnish with chopped parsley and serve immediately. Enjoy!
