Ingredients

  • 4 large fresh ripe peaches
  • 0.25 cup Drambuie liqueur
  • 0.25 cup brown sugar
  • 0.25 cup water
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pinch pinch of salt

Directions

Step 1

Bring a large pot of water to a boil, then prepare a bowl of ice water.

Step 2

Score a small 'X' at the bottom of each peach using a sharp knife. Blanch the peaches in the boiling water for 30 seconds, then transfer them immediately to the ice water to cool.

Step 3

Once cooled, gently peel the skins off the peaches. Slice them in half, remove the pits, and cut each peach into wedges.
